Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 cup Carrots, sliced
  • 1 cup Bell Peppers, chopped
  • 1 cup Broccoli Florets
  • 1 cup Coconut Milk
  • ½ cup Peanut Butter
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Red Curry Paste
  • 1 tablespoon Lime Juice
  • 1 cup Vegetable Broth
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and ginger. Sauté until fragrant.
  3. Add carrots, bell peppers, and broccoli. Cook for 5-7 minutes.
  4. Stir in coconut milk, peanut butter, soy sauce, red curry paste, lime juice, and vegetable broth. Bring to a simmer.
  5. Simmer for 15-20 minutes, until vegetables are tender.
  6. Season with salt and pepper to taste. Serve hot.
