Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 inch ginger, grated
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • ½ cup peanut butter
  • 2 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 8 oz rice noodles
  • 1 cup carrots, julienned
  • 1 cup bell peppers, sliced
  • 1 cup spinach
  • ¼ cup cilantro, chopped
  • 1 lime, cut into wedges

Instructions 

  1. Heat oil in a large pot over medium heat. Add garlic, onion, and ginger. Cook until fragrant.
  2. Add vegetable broth, coconut milk, peanut butter, soy sauce, lime juice, and brown sugar. Stir until peanut butter is dissolved.
  3. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Add rice noodles, carrots, and bell peppers. Cook until noodles are tender.
  5. Stir in spinach and cook until wilted. Serve hot, garnished with cilantro and lime wedges.
