Instructions
Cook the rice noodles according to package instructions. Drain and set aside.
In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, ginger, and water until smooth.
In a pan, combine the cooked noodles with the peanut sauce. Toss to coat evenly.
Stir in shredded carrots and cook for another 2-3 minutes until heated through.
Garnish with chopped cilantro and peanuts before serving.
