Ingredients 

Main Ingredients

  • 8 oz rice noodles
  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 2 tablespoon lime juice
  • 2 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 clove garlic, minced
  • 1 teaspoon ginger, grated
  • ¼ cup water
  • 1 cup shredded carrots
  • ¼ cup chopped cilantro
  • ¼ cup chopped peanuts

Instructions 

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, ginger, and water until smooth.
  3. In a pan, combine the cooked noodles with the peanut sauce. Toss to coat evenly.
  4. Stir in shredded carrots and cook for another 2-3 minutes until heated through.
  5. Garnish with chopped cilantro and peanuts before serving.
