Ingredients 

Main Ingredients

  • 200 g rice noodles
  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 2 tablespoon lime juice
  • 2 tablespoon honey
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • ¼ cup water
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • ¼ cup chopped peanuts
  • 2 green onions, sliced
  • Fresh cilantro for garnish

Instructions 

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a bowl, whisk together peanut butter, soy sauce, lime juice, honey, sesame oil, garlic, ginger, and water until smooth.
  3. In a large pan, heat a bit of oil over medium heat. Add bell pepper and carrot, and sauté for 3-4 minutes until tender.
  4. Add the cooked noodles and peanut sauce to the pan. Toss to combine and heat through.
  5. Serve topped with chopped peanuts, green onions, and fresh cilantro.
