Ingredients 

Main Ingredients

  • 8 oz rice noodles
  • 1 lb shrimp, peeled and deveined
  • 1 cup shredded carrots
  • 1 cup bean sprouts
  • ¼ cup chopped peanuts
  • 2 tablespoon vegetable oil

Peanut Sauce

  • ½ cup peanut butter
  • ¼ cup soy sauce
  • 2 tablespoon lime juice
  • 2 tablespoon honey
  • 1 tablespoon sriracha
  • ¼ cup water

Instructions 

  1. Cook rice noodles according to package instructions. Drain and set aside.
  2. In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, honey, sriracha, and water until smooth. Set aside.
  3. Heat vegetable oil in a skillet over medium-high heat. Add shrimp and cook until pink and opaque, about 3-4 minutes per side. Remove from skillet and set aside.
  4. In the same skillet, add shredded carrots and bean sprouts. Cook for 2-3 minutes until slightly tender.
  5. Add cooked noodles, shrimp, and peanut sauce to the skillet. Toss to combine and heat through.
  6. Garnish with chopped peanuts and serve immediately.
