Thai Peanut Shrimp Noodles

Main Ingredients
- 8 oz rice noodles
- 1 lb shrimp, peeled and deveined
- 1 cup shredded carrots
- 1 cup bean sprouts
- ¼ cup chopped peanuts
- 2 tablespoon vegetable oil
Peanut Sauce
- ½ cup peanut butter
- ¼ cup soy sauce
- 2 tablespoon lime juice
- 2 tablespoon honey
- 1 tablespoon sriracha
- ¼ cup water
Cook rice noodles according to package instructions. Drain and set aside.
In a mixing bowl, whisk together peanut butter, soy sauce, lime juice, honey, sriracha, and water until smooth. Set aside.
Heat vegetable oil in a skillet over medium-high heat. Add shrimp and cook until pink and opaque, about 3-4 minutes per side. Remove from skillet and set aside.
In the same skillet, add shredded carrots and bean sprouts. Cook for 2-3 minutes until slightly tender.
Add cooked noodles, shrimp, and peanut sauce to the skillet. Toss to combine and heat through.
Garnish with chopped peanuts and serve immediately.
