Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 lb Chicken Breast, cubed
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 4 cups Chicken Broth
  • 1 cup Coconut Milk
  • ½ cup Peanut Butter
  • 2 tablespoon Soy Sauce
  • 1 tablespoon Fish Sauce
  • 1 Lime, juiced
  • 1 tablespoon Brown Sugar
  • 1 cup Carrots, sliced
  • 1 cup Bell Pepper, chopped
  • ¼ cup Cilantro, chopped
  • to taste Salt and Pepper

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the cubed chicken and cook until browned. Remove and set aside.
  3. In the same pot, add the chopped onion, minced garlic, and grated ginger. Cook until the onion is translucent.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the coconut milk, peanut butter, soy sauce, fish sauce, lime juice, and brown sugar. Stir until well combined.
  6. Return the chicken to the pot and add the sliced carrots and chopped bell pepper. Simmer for 15-20 minutes until the vegetables are tender.
  7. Season with salt and pepper to taste. Garnish with chopped cilantro before serving.
