Ingredients 

Main Ingredients

  • 1 cup Pineapple chunks fresh or canned
  • 1 cup Coconut milk
  • 2 tablespoon Red curry paste
  • 1 cup Vegetables mixed, chopped
  • 1 tablespoon Fish sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Brown sugar
  • 1 tablespoon Lime juice fresh
  • 1 tablespoon Oil for cooking

Instructions 

  1. Heat oil in a saucepan over medium heat.
  2. Add red curry paste and cook for 1-2 minutes.
  3. Add coconut milk and bring to a simmer.
  4. Add pineapple chunks, vegetables, fish sauce, soy sauce, and brown sugar. Cook for 10-15 minutes.
  5. Stir in lime juice and serve hot.
