Main Ingredients
- 1 cup Pineapple chunks fresh or canned
- 1 cup Coconut milk
- 2 tablespoon Red curry paste
- 1 cup Vegetables mixed, chopped
- 1 tablespoon Fish sauce
- 1 tablespoon Soy sauce
- 1 tablespoon Brown sugar
- 1 tablespoon Lime juice fresh
- 1 tablespoon Oil for cooking
Heat oil in a saucepan over medium heat.
Add red curry paste and cook for 1-2 minutes.
Add coconut milk and bring to a simmer.
Add pineapple chunks, vegetables, fish sauce, soy sauce, and brown sugar. Cook for 10-15 minutes.
Stir in lime juice and serve hot.
