Thai Pineapple Fried Rice Recipe

Main Ingredients
- 2 cups Cooked Jasmine Rice preferably day-old
- 1 cup Pineapple Chunks fresh or canned
- 2 tablespoon Vegetable Oil
- 1 cup Mixed Vegetables peas, carrots, corn
- 2 cloves Garlic minced
- 2 tablespoon Soy Sauce
- 1 tablespoon Fish Sauce
- 1 teaspoon Curry Powder
- 2 tablespoon Green Onions chopped
- ¼ cup Cashews optional
Heat the oil in a wok over medium-high heat.
Add the garlic and stir-fry until fragrant.
Add the mixed vegetables and stir-fry for 2-3 minutes.
Add the pineapple chunks and cook for another 2 minutes.
Push the vegetables to the side of the wok and add the rice, breaking up any clumps.
Stir in the soy sauce, fish sauce, and curry powder.
Mix everything together and cook for another 2-3 minutes.
Garnish with green onions and cashews before serving.
