Thai Pineapple Shrimp Curry

Main Ingredients
- 1 lb Shrimp, peeled and deveined
- 1 cup Pineapple chunks
- 2 tablespoon Red curry paste
- 1 can Coconut milk
- 1 tablespoon Fish sauce
- 1 tablespoon Brown sugar
- 1 cup Bell pepper, sliced
- 1 cup Basil leaves
- 1 tablespoon Vegetable oil
Heat oil in a large pan over medium heat.
Add red curry paste and cook for 1-2 minutes until fragrant.
Add coconut milk, fish sauce, and brown sugar. Stir to combine.
Add shrimp and cook until pink, about 5 minutes.
Add pineapple chunks and bell pepper. Cook for another 5 minutes.
Stir in basil leaves and remove from heat. Serve hot.
