Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup Pineapple chunks
  • 2 tablespoon Red curry paste
  • 1 can Coconut milk
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 cup Bell pepper, sliced
  • 1 cup Basil leaves
  • 1 tablespoon Vegetable oil

Instructions 

  1. Heat oil in a large pan over medium heat.
  2. Add red curry paste and cook for 1-2 minutes until fragrant.
  3. Add coconut milk, fish sauce, and brown sugar. Stir to combine.
  4. Add shrimp and cook until pink, about 5 minutes.
  5. Add pineapple chunks and bell pepper. Cook for another 5 minutes.
  6. Stir in basil leaves and remove from heat. Serve hot.
