Ingredients

  • 1 large Pomelo peeled and segmented
  • 1 cup Cooked Shrimp optional
  • ½ cup Fresh Mint Leaves
  • ½ cup Fresh Cilantro
  • ¼ cup Roasted Peanuts chopped
  • 1 small Red Chili sliced thin

Dressing

  • 3 tablespoon Fish Sauce
  • 2 tablespoon Lime Juice freshly squeezed
  • 1 tablespoon Palm Sugar or brown sugar
  • 1 clove Garlic minced

Instructions 

  1. 1. In a mixing bowl, combine the pomelo segments, cooked shrimp, mint leaves, cilantro, roasted peanuts, and red chili.
  2. 2. In a small bowl, whisk together the fish sauce, lime juice, palm sugar, and minced garlic until the sugar is dissolved.
  3. 3. Pour the dressing over the salad and toss gently to combine.
  4. 4. Serve immediately and enjoy!
