Ingredients 

Main Ingredients

  • 500 g Pork shoulder, cut into cubes
  • 1 can Coconut milk 400ml
  • 2 tablespoon Red curry paste
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 handful Fresh basil leaves

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and sauté the chopped onion until translucent.
  2. 2. Add the minced garlic and red curry paste. Cook for another minute until fragrant.
  3. 3. Add the pork cubes and cook until browned on all sides.
  4. 4. Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine.
  5. 5. Add the sliced bell peppers. Bring the mixture to a simmer and cook for about 20 minutes, or until the pork is tender.
  6. 6. Stir in the fresh basil leaves just before serving. Serve hot with steamed rice.
