Ingredients 

Meatballs

  • 500 g Ground Pork
  • 2 cloves Garlic, minced
  • 1 tablespoon Fish Sauce
  • 1 teaspoon Sugar
  • 0.5 teaspoon White Pepper

Soup

  • 6 cups Chicken Broth
  • 1 cup Coconut Milk
  • 2 tablespoon Red Curry Paste
  • 1 cup Mushrooms, sliced
  • 1 cup Baby Spinach
  • 2 tablespoon Lime Juice
  • 2 tablespoon Fresh Cilantro, chopped

Instructions 

  1. 1. In a mixing bowl, combine ground pork, minced garlic, fish sauce, sugar, and white pepper. Mix well and form into small meatballs.
  2. 2. In a large pot, bring chicken broth to a boil. Add the meatballs and cook until they float to the surface.
  3. 3. Add coconut milk, red curry paste, and mushrooms to the pot. Simmer for 10 minutes.
  4. 4. Add baby spinach and lime juice. Cook for another 2 minutes.
  5. 5. Serve hot, garnished with fresh cilantro.
