Ingredients 

Main Ingredients

  • 4 cups Potatoes, peeled and diced
  • 1 cup Coconut Milk
  • 2 cups Vegetable Broth
  • 1 tablespoon Red Curry Paste
  • 1 tablespoon Lime Juice
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Ground Black Pepper
  • 1 Chopped Cilantro for garnish

Instructions 

  1. 1. In a large pot, combine potatoes, vegetable broth, and red curry paste. Bring to a boil.
  2. 2. Reduce heat and simmer until potatoes are tender, about 20 minutes.
  3. 3. Use a blender to puree the soup until smooth.
  4. 4. Return the soup to the pot and stir in coconut milk, lime juice, soy sauce, sugar, salt, and pepper. Simmer for another 5 minutes.
  5. 5. Serve hot, garnished with chopped cilantro.
