Thai Prawn Curry

Main Ingredients
- 500 g Prawns peeled and deveined
- 1 tablespoon Vegetable Oil
- 1 cup Coconut Milk
- 2 tablespoon Thai Red Curry Paste
- 1 cup Bell Peppers sliced
- 1 tablespoon Fish Sauce
- 1 tablespoon Brown Sugar
- 1 tablespoon Lime Juice freshly squeezed
- 1 handful Fresh Basil chopped
Heat the oil in a large pan over medium heat.
Add the Thai red curry paste and cook for 1-2 minutes until fragrant.
Pour in the coconut milk and bring to a simmer.
Add the prawns and bell peppers, and cook for 5-7 minutes until the prawns are cooked through.
Stir in the fish sauce, brown sugar, and lime juice. Cook for another 2 minutes.
Remove from heat and stir in the fresh basil. Serve hot with rice.
