Ingredients 

Main Ingredients

  • 500 g Prawns peeled and deveined
  • 1 tablespoon Vegetable Oil
  • 1 cup Coconut Milk
  • 2 tablespoon Thai Red Curry Paste
  • 1 cup Bell Peppers sliced
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Brown Sugar
  • 1 tablespoon Lime Juice freshly squeezed
  • 1 handful Fresh Basil chopped

Instructions 

  1. Heat the oil in a large pan over medium heat.
  2. Add the Thai red curry paste and cook for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the prawns and bell peppers, and cook for 5-7 minutes until the prawns are cooked through.
  5. Stir in the fish sauce, brown sugar, and lime juice. Cook for another 2 minutes.
  6. Remove from heat and stir in the fresh basil. Serve hot with rice.
