Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 4 cups pumpkin puree
  • 3 cups vegetable broth
  • 1 can coconut milk
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Add the minced garlic and red curry paste, and cook for another minute.
  3. Stir in the pumpkin puree, vegetable broth, and coconut milk. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Add the fish sauce, brown sugar, and lime juice. Season with salt and pepper to taste.
  5. Use a blender to puree the soup until smooth. Return to the pot and heat through.
  6. Serve hot, garnished with fresh cilantro.
