Ingredients 

Main Ingredients

  • 1 package Ramen noodles
  • 1 cup Coconut milk
  • 2 tablespoon Red curry paste
  • 1 cup Vegetable broth
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice
  • 1 cup Mixed vegetables e.g., bell peppers, carrots, snap peas
  • 1 tablespoon Peanut butter
  • 1 teaspoon Ginger, grated
  • 1 clove Garlic, minced

Instructions 

  1. 1. Cook ramen noodles according to package instructions. Drain and set aside.
  2. 2. In a pot, heat coconut milk and red curry paste over medium heat. Stir until combined.
  3. 3. Add vegetable broth, soy sauce, lime juice, and peanut butter. Stir until smooth.
  4. 4. Add mixed vegetables, ginger, and garlic. Cook until vegetables are tender.
  5. 5. Add cooked ramen noodles to the pot. Stir to combine and heat through.
  6. 6. Serve hot, garnished with fresh herbs if desired.
