Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable oil
  • 1 lb Chicken breast, cut into bite-sized pieces
  • 3 tablespoon Thai red curry paste
  • 1 can Coconut milk 400ml
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 1 Onion, sliced
  • 2 tablespoon Fish sauce
  • 1 tablespoon Brown sugar
  • 1 cup Basil leaves fresh

Instructions 

  1. Heat the oil in a large pot over medium heat.
  2. Add the chicken and cook until browned.
  3. Stir in the curry paste and cook for another minute.
  4. Add the coconut milk, bell peppers, onion, fish sauce, and brown sugar. Bring to a simmer.
  5. Cook for 15-20 minutes, until the chicken is cooked through and the vegetables are tender.
  6. Stir in the basil leaves just before serving.
