Ingredients

  • 2 tablespoon Red curry paste
  • 400 ml Coconut milk
  • 1 cup Vegetables (bell peppers, carrots, etc.) chopped
  • 1 tablespoon Fish sauce
  • 1 teaspoon Sugar
  • 1 handful Fresh basil leaves

Instructions 

  1. 1. Heat the saucepan over medium heat and add the red curry paste. Cook for 1-2 minutes.
  2. 2. Add the coconut milk and bring to a simmer.
  3. 3. Add the chopped vegetables and cook until tender.
  4. 4. Stir in the fish sauce and sugar. Cook for another 2-3 minutes.
  5. 5. Remove from heat and stir in fresh basil leaves before serving.
