Ingredients 

Main Ingredients

  • 2 tablespoon Red curry paste
  • 400 ml Coconut milk
  • 1 cup Vegetables (bell peppers, carrots, etc.) Chopped
  • 1 tablespoon Fish sauce
  • 1 teaspoon Sugar
  • 1 cup Protein (chicken, tofu, etc.) Optional
  • 1 tablespoon Vegetable oil
  • 1 handful Fresh basil leaves For garnish

Instructions 

  1. Heat the oil in a saucepan over medium heat.
  2. Add the red curry paste and cook for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the vegetables and protein, if using, and cook until tender.
  5. Stir in the fish sauce and sugar, and cook for another 2-3 minutes.
  6. Garnish with fresh basil leaves and serve hot with rice.
