Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 lb Chicken Breast cut into bite-sized pieces
  • 2 tablespoon Red Curry Paste
  • 1 can Coconut Milk 400ml
  • 1 cup Chicken Broth
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Brown Sugar
  • 1 Red Bell Pepper sliced
  • 1 Green Bell Pepper sliced
  • 1 Onion sliced
  • 1 cup Basil Leaves fresh

Instructions 

  1. Heat the oil in a large pan over medium heat.
  2. Add the chicken and cook until browned.
  3. Add the red curry paste and cook for another minute.
  4. Pour in the coconut milk and chicken broth, then bring to a simmer.
  5. Add the fish sauce, brown sugar, bell peppers, and onion. Cook until vegetables are tender.
  6. Stir in the basil leaves and cook for another minute.
  7. Serve hot with rice.
