Ingredients 

Main Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 1 cup snap peas
  • 200 g rice noodles
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions 

  1. Heat oil in a pot over medium heat. Add onion and garlic, cook until softened.
  2. Add red curry paste, cook for another minute.
  3. Pour in coconut milk and chicken broth. Stir in fish sauce, soy sauce, and brown sugar. Bring to a simmer.
  4. Add bell pepper, mushrooms, and snap peas. Cook until vegetables are tender.
  5. Cook rice noodles according to package instructions. Drain and add to the soup.
  6. Serve hot, garnished with fresh cilantro and lime wedges.
