Ingredients

  • 5 pieces Dried red chilies soaked in warm water
  • 1 tablespoon Coriander seeds toasted
  • 1 teaspoon Cumin seeds toasted
  • 1 teaspoon Black peppercorns
  • 1 tablespoon Lemongrass finely chopped
  • 1 tablespoon Galangal finely chopped
  • 1 tablespoon Garlic minced
  • 1 tablespoon Shallots finely chopped
  • 1 teaspoon Shrimp paste
  • 1 teaspoon Salt

Instructions 

  1. 1. Soak the dried red chilies in warm water for about 10 minutes, then drain.
  2. 2. Toast the coriander seeds and cumin seeds in a dry pan over medium heat until fragrant.
  3. 3. Combine all ingredients in a blender and blend until smooth.
  4. 4. Store in an airtight container in the refrigerator for up to a week.
