Ingredients 

Main Ingredients

  • 2 tablespoon Red curry paste
  • 1 can Coconut milk (400ml)
  • 1 cup Mixed vegetables (carrots, bell peppers, broccoli)
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sugar
  • 1 tablespoon Vegetable oil
  • to taste Salt

Instructions 

  1. Heat the vegetable oil in a saucepan over medium heat.
  2. Add the red curry paste and cook for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and bring to a simmer.
  4. Add the mixed vegetables and cook for 10-15 minutes until tender.
  5. Stir in the soy sauce, sugar, and salt to taste. Cook for another 2-3 minutes.
  6. Serve hot with steamed rice.
