  • 4 fillets Salmon skinless
  • 2 tablespoons Red Curry Paste
  • 1 can Coconut Milk 400ml
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Brown Sugar
  • 1 cup Bell Peppers sliced
  • 1 cup Snap Peas
  • 1 handful Fresh Basil chopped

Instructions 

  1. 1. Heat a pan over medium heat and add the red curry paste. Cook for 1-2 minutes until fragrant.
  2. 2. Add the coconut milk, fish sauce, and brown sugar. Stir to combine and bring to a simmer.
  3. 3. Add the salmon fillets and cook for 5-7 minutes on each side, or until cooked through.
  4. 4. Add the bell peppers and snap peas and cook for another 3-4 minutes until tender.
  5. 5. Stir in the fresh basil and serve hot with rice.
