Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 carrot, sliced
  • 1 red bell pepper, chopped
  • 1 tablespoon lime juice
  • to taste salt
  • to taste black pepper
  • for garnish fresh cilantro, chopped

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and red curry paste, cook for another minute.
  4. Add red lentils, vegetable broth, coconut milk, carrot, and red bell pepper. Bring to a boil.
  5. Reduce heat and let it simmer for 20-25 minutes, until lentils are tender.
  6. Stir in lime juice, salt, and black pepper to taste.
  7. Garnish with fresh cilantro before serving.
