Ingredients 

Salad

  • 200 g rice noodles cooked according to package instructions
  • 1 carrot julienned
  • 1 cucumber julienned
  • 1 red bell pepper thinly sliced
  • ¼ cup fresh cilantro chopped
  • ¼ cup fresh mint chopped
  • ¼ cup green onions sliced

Dressing

  • 3 tablespoon lime juice freshly squeezed
  • 2 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon sugar
  • 1 clove garlic minced
  • 1 teaspoon red chili flakes

Instructions 

  1. Cook the rice noodles according to the package instructions. Drain and rinse under cold water. Set aside.
  2. In a large bowl, combine the cooked rice noodles, carrot, cucumber, red bell pepper, cilantro, mint, and green onions.
  3. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, sugar, garlic, and red chili flakes.
  4. Pour the dressing over the salad and toss to combine. Serve immediately or chill in the refrigerator for up to 2 hours before serving.
