Ingredients 

Main Ingredients

  • 2 cups broccoli florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 2 tablespoon olive oil
  • 2 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, soy sauce, lime juice, honey, garlic powder, and ginger powder.
  3. Add broccoli, bell peppers, zucchini, and red onion to the bowl. Toss to coat.
  4. Spread vegetables on a baking sheet in a single layer.
  5. Roast for 25-30 minutes, stirring halfway through, until vegetables are tender and slightly charred.
  6. Season with salt and pepper to taste before serving.
