Ingredients 

Roti Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Salt
  • 1 tablespoon Oil
  • ¾ cup Water

Curry Ingredients

  • 2 tablespoon Red curry paste
  • 1 can Coconut milk
  • 1 cup Vegetables (carrots, bell peppers, etc.) chopped
  • 1 tablespoon Fish sauce
  • 1 tablespoon Sugar
  • 1 tablespoon Lime juice freshly squeezed
  • 1 tablespoon Oil

Instructions 

  1. 1. In a mixing bowl, combine flour and salt. Add oil and water gradually, mixing until a dough forms. Knead for 5 minutes until smooth. Cover and let rest for 15 minutes.
  2. 2. Divide dough into small balls. Roll out each ball into a thin circle. Heat a pan over medium heat and cook each roti until golden brown on both sides. Set aside.
  3. 3. In a pan, heat oil over medium heat. Add red curry paste and cook for 1-2 minutes until fragrant.
  4. 4. Add coconut milk, vegetables, fish sauce, and sugar. Simmer for 10-15 minutes until vegetables are tender.
  5. 5. Stir in lime juice. Serve curry with roti.
