Main Ingredients
- 8 pieces Rice paper wrappers
- 1 cup Shredded carrots
- 1 cup Shredded lettuce
- ½ cup Fresh cilantro chopped
- ½ cup Fresh mint chopped
- 1 cup Cooked shrimp peeled and deveined
Peanut Dipping Sauce
- ½ cup Peanut butter
- 2 tablespoon Soy sauce
- 1 tablespoon Lime juice freshly squeezed
- 1 tablespoon Honey
- 1 clove Garlic minced
- 1 teaspoon Sriracha optional
1. Prepare all the vegetables and herbs by washing and chopping them.
2. Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, until it softens.
3. Lay the softened wrapper flat on a cutting board. Place a small amount of each ingredient (carrots, lettuce, cilantro, mint, shrimp) in the center of the wrapper.
4. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom to the top.
5. Repeat with the remaining wrappers and fillings.
6. To make the peanut dipping sauce, combine all the sauce ingredients in a bowl and mix until smooth.
7. Serve the salad rolls with the peanut dipping sauce on the side.
