Thai Salmon Curry

- 4 fillets Salmon skinless
- 1 tablespoon Olive Oil
- 1 can Coconut Milk full-fat
- 2 tablespoon Red Curry Paste
- 1 tablespoon Fish Sauce
- 1 tablespoon Brown Sugar
- 1 cup Bell Peppers sliced
- 1 cup Snap Peas
- 1 tablespoon Lime Juice fresh
- 1 handful Fresh Basil chopped
Heat olive oil in a large skillet over medium heat.
Add the red curry paste and cook for 1-2 minutes until fragrant.
Pour in the coconut milk, fish sauce, and brown sugar. Stir to combine.
Add the salmon fillets and cook for 5-7 minutes on each side, until cooked through.
Add the bell peppers and snap peas. Cook for another 3-4 minutes until vegetables are tender.
Stir in the lime juice and fresh basil. Serve hot.
