Ingredients

  • 4 fillets Salmon skinless
  • 1 tablespoon Olive Oil
  • 1 can Coconut Milk full-fat
  • 2 tablespoon Red Curry Paste
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Brown Sugar
  • 1 cup Bell Peppers sliced
  • 1 cup Snap Peas
  • 1 tablespoon Lime Juice fresh
  • 1 handful Fresh Basil chopped

Instructions 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the red curry paste and cook for 1-2 minutes until fragrant.
  3. Pour in the coconut milk, fish sauce, and brown sugar. Stir to combine.
  4. Add the salmon fillets and cook for 5-7 minutes on each side, until cooked through.
  5. Add the bell peppers and snap peas. Cook for another 3-4 minutes until vegetables are tender.
  6. Stir in the lime juice and fresh basil. Serve hot.
