Ingredients 

Salad

  • 4 fillets Salmon skinless
  • 2 cups Mixed greens
  • 1 cup Cherry tomatoes halved
  • 1 cup Cucumber sliced
  • ¼ cup Red onion thinly sliced
  • ¼ cup Fresh cilantro chopped
  • ¼ cup Fresh mint chopped
  • 2 tablespoon Fish sauce
  • 2 tablespoon Lime juice freshly squeezed
  • 1 tablespoon Soy sauce low sodium
  • 1 tablespoon Honey
  • 1 clove Garlic minced
  • 1 tablespoon Olive oil

Instructions 

  1. 1. Preheat the grill to medium-high heat.
  2. 2. Season the salmon fillets with salt and pepper. Grill for 4-5 minutes on each side or until cooked through.
  3. 3. In a small bowl, whisk together fish sauce, lime juice, soy sauce, honey, garlic, and olive oil to make the dressing.
  4. 4. In a large mixing bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, cilantro, and mint.
  5. 5. Flake the grilled salmon into bite-sized pieces and add to the salad.
  6. 6. Drizzle the dressing over the salad and toss gently to combine.
  7. 7. Serve immediately and enjoy!
