Ingredients 

Main Ingredients

  • 1 lb salmon fillet cut into chunks
  • 1 can coconut milk
  • 2 cups chicken broth
  • 1 tablespoon red curry paste
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 red bell pepper sliced
  • 1 cup mushrooms sliced
  • 1 cup baby spinach
  • 2 cloves garlic minced
  • 1 inch ginger minced
  • 2 green onions chopped
  • fresh cilantro for garnish

Instructions 

  1. Heat a pot over medium heat. Add a bit of oil.
  2. Sauté garlic and ginger until fragrant.
  3. Add red curry paste and cook for another minute.
  4. Pour in chicken broth and coconut milk. Bring to a simmer.
  5. Add salmon chunks, bell pepper, and mushrooms. Cook for about 5 minutes.
  6. Stir in fish sauce, lime juice, and brown sugar.
  7. Add baby spinach and green onions. Cook until spinach wilts.
  8. Serve hot, garnished with fresh cilantro.
