Instructions
Heat a pot over medium heat. Add a bit of oil.
Sauté garlic and ginger until fragrant.
Add red curry paste and cook for another minute.
Pour in chicken broth and coconut milk. Bring to a simmer.
Add salmon chunks, bell pepper, and mushrooms. Cook for about 5 minutes.
Stir in fish sauce, lime juice, and brown sugar.
Add baby spinach and green onions. Cook until spinach wilts.
Serve hot, garnished with fresh cilantro.
