Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Red Curry Paste
  • 1 Butternut Squash, peeled and cubed
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sugar
  • 1 Lime, juiced
  • 1 handful Fresh Basil, chopped

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft.
  3. Add minced garlic and red curry paste, cook for another minute.
  4. Add cubed butternut squash, coconut milk, and vegetable broth. Bring to a boil.
  5. Reduce heat and simmer until squash is tender, about 20 minutes.
  6. Stir in soy sauce, sugar, and lime juice. Cook for another 5 minutes.
  7. Garnish with fresh basil and serve hot.
