Ingredients

  • 2 pieces Chicken breasts boneless, skinless
  • 1 cup Cabbage shredded
  • 1 cup Carrots julienned
  • 1 cup Cucumber sliced
  • ¼ cup Red onion thinly sliced
  • ¼ cup Cilantro chopped
  • ¼ cup Mint leaves chopped
  • 1 piece Lime juiced
  • 2 tablespoons Fish sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Brown sugar
  • 1 teaspoon Chili flakes
  • 2 tablespoons Peanuts crushed

Instructions 

  1. 1. Grill or cook the chicken breasts in a skillet until fully cooked. Let them cool, then slice thinly.
  2. 2. In a large mixing bowl, combine cabbage, carrots, cucumber, red onion, cilantro, and mint leaves.
  3. 3. In a small bowl, mix lime juice, fish sauce, soy sauce, brown sugar, and chili flakes to make the dressing.
  4. 4. Add the sliced chicken to the vegetables and pour the dressing over the salad. Toss well to combine.
  5. 5. Garnish with crushed peanuts before serving.
