Thai Style Chicken Satay Recipe

Marinade
- 500 g Chicken breast, cut into strips
- 2 tablespoon Soy sauce
- 1 tablespoon Fish sauce
- 1 tablespoon Brown sugar
- 2 cloves Garlic, minced
- 1 teaspoon Ground turmeric
- 1 teaspoon Ground coriander
- 1 cup Coconut milk
Peanut Sauce
- ½ cup Peanut butter
- ½ cup Coconut milk
- 1 tablespoon Soy sauce
- 1 tablespoon Lime juice
- 1 tablespoon Brown sugar
- 1 clove Garlic, minced
- 1 teaspoon Chili paste
1. In a bowl, combine soy sauce, fish sauce, brown sugar, garlic, turmeric, coriander, and coconut milk. Add chicken strips and marinate for at least 30 minutes.
2. Thread marinated chicken onto skewers.
3. Preheat grill to medium-high heat. Grill chicken skewers for 5-7 minutes on each side, until cooked through.
4. For the peanut sauce, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, garlic, and chili paste in a saucepan. Cook over low heat until smooth and heated through.
5. Serve chicken satay with peanut sauce on the side.
