Ingredients 

Main Ingredients

  • 1 lb Chicken breast, thinly sliced
  • 4 cups Chicken broth
  • 1 can Coconut milk
  • 2 tablespoon Red curry paste
  • 1 Lemongrass stalk, chopped
  • 2 cloves Garlic, minced
  • 1 inch Ginger, minced
  • 2 tablespoon Fish sauce
  • 1 Lime, juiced
  • 1 cup Mushrooms, sliced
  • 1 cup Cherry tomatoes, halved
  • 1 handful Cilantro, chopped

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the garlic, ginger, and lemongrass. Sauté for a couple of minutes until fragrant.
  2. 2. Add the red curry paste and cook for another minute.
  3. 3. Pour in the chicken broth and bring to a boil. Reduce the heat and let it simmer for 10 minutes.
  4. 4. Add the chicken slices and cook until they are no longer pink.
  5. 5. Stir in the coconut milk, fish sauce, lime juice, mushrooms, and cherry tomatoes. Simmer for another 10 minutes.
  6. 6. Serve hot, garnished with chopped cilantro.
