Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable oil
  • 1 lb Chicken breast, thinly sliced
  • 2 cups Chicken broth
  • 1 can Coconut milk
  • 1 Lemongrass stalk, chopped
  • 3 slices Galangal
  • 3 Kaffir lime leaves
  • 1 Red chili, sliced
  • 2 tablespoon Fish sauce
  • 1 tablespoon Lime juice
  • 1 cup Mushrooms, sliced
  • 2 tablespoon Cilantro, chopped

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the chicken and cook until no longer pink.
  2. Add the chicken broth, coconut milk, lemongrass, galangal, and kaffir lime leaves. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Add the mushrooms and cook for another 5 minutes.
  4. Stir in the fish sauce, lime juice, and red chili. Simmer for another 5 minutes.
  5. Remove from heat and discard the lemongrass, galangal, and kaffir lime leaves. Serve hot, garnished with cilantro.
