Thai Style Coconut Chicken Soup

Main Ingredients
- 1 tablespoon Vegetable oil
- 1 lb Chicken breast, thinly sliced
- 2 cups Chicken broth
- 1 can Coconut milk
- 1 Lemongrass stalk, chopped
- 3 slices Galangal
- 3 Kaffir lime leaves
- 1 Red chili, sliced
- 2 tablespoon Fish sauce
- 1 tablespoon Lime juice
- 1 cup Mushrooms, sliced
- 2 tablespoon Cilantro, chopped
Heat the oil in a large pot over medium heat. Add the chicken and cook until no longer pink.
Add the chicken broth, coconut milk, lemongrass, galangal, and kaffir lime leaves. Bring to a boil, then reduce heat and simmer for 10 minutes.
Add the mushrooms and cook for another 5 minutes.
Stir in the fish sauce, lime juice, and red chili. Simmer for another 5 minutes.
Remove from heat and discard the lemongrass, galangal, and kaffir lime leaves. Serve hot, garnished with cilantro.
