Ingredients 

Meatballs

  • 500 g Ground Pork
  • 1 Egg
  • ½ cup Breadcrumbs
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Fish Sauce
  • ¼ cup Chopped Cilantro

Red Curry Sauce

  • 1 tablespoon Red Curry Paste
  • 1 can Coconut Milk
  • 1 tablespoon Fish Sauce
  • 1 tablespoon Brown Sugar
  • 1 Lime, juiced
  • ¼ cup Chopped Basil

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine ground pork, egg, breadcrumbs, garlic, ginger, soy sauce, fish sauce, and cilantro. Mix well.
  3. Form mixture into meatballs and place on a baking sheet. Bake for 15-20 minutes until cooked through.
  4. In a large skillet, heat red curry paste over medium heat until fragrant.
  5. Add coconut milk, fish sauce, brown sugar, and lime juice. Stir to combine and bring to a simmer.
  6. Add cooked meatballs to the sauce and simmer for 5 minutes.
  7. Garnish with chopped basil and serve hot.
