Thai Sweet Potato Curry

Main Ingredients
- 2 cups Sweet Potatoes peeled and cubed
- 1 can Coconut Milk
- 1 tablespoon Red Curry Paste
- 1 cup Vegetable Broth
- 1 tablespoon Soy Sauce
- 1 teaspoon Brown Sugar
- 1 tablespoon Lime Juice freshly squeezed
- 1 cup Spinach fresh
- 1 tablespoon Olive Oil
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 1 teaspoon Ginger grated
Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
Add minced garlic and grated ginger, cook for another minute.
Stir in red curry paste and cook for another minute.
Add sweet potatoes, coconut milk, vegetable broth, soy sauce, and brown sugar. Bring to a boil, then reduce heat and simmer for 20 minutes or until sweet potatoes are tender.
Stir in fresh spinach and lime juice. Cook until spinach is wilted.
Serve hot with rice or naan bread.
