Ingredients 

Main Ingredients

  • 2 medium sweet potatoes peeled and diced
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 tablespoon lime juice freshly squeezed
  • to taste salt
  • to taste black pepper
  • for garnish cilantro chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and red curry paste, cook for another minute.
  4. Add the diced sweet potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
  5. Use a blender to puree the soup until smooth. Return to the pot.
  6. Stir in the coconut milk and lime juice. Season with salt and pepper to taste. Heat through but do not boil.
  7. Serve hot, garnished with chopped cilantro.
