Instructions
Heat the oil in a large pan over medium heat.
Add the tofu and cook until golden brown. Remove and set aside.
In the same pan, add the red curry paste and cook for 1 minute.
Pour in the coconut milk and bring to a simmer.
Add the mixed vegetables and cook until tender.
Return the tofu to the pan and stir in the soy sauce and sugar.
Garnish with fresh basil before serving.
