Ingredients 

Main Ingredients

  • 1 block Tofu firm, cubed
  • 1 tablespoon Vegetable Oil
  • 1 cup Coconut Milk
  • 2 tablespoon Red Curry Paste
  • 1 cup Mixed Vegetables chopped
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sugar
  • 1 handful Fresh Basil chopped

Instructions 

  1. Heat the oil in a large pan over medium heat.
  2. Add the tofu and cook until golden brown. Remove and set aside.
  3. In the same pan, add the red curry paste and cook for 1 minute.
  4. Pour in the coconut milk and bring to a simmer.
  5. Add the mixed vegetables and cook until tender.
  6. Return the tofu to the pan and stir in the soy sauce and sugar.
  7. Garnish with fresh basil before serving.
