Thai Tom Yum Soup Recipe

Main Ingredients
- 4 cups Chicken broth
- 1 cup Mushrooms, sliced
- 2 stalks Lemongrass, cut into 1-inch pieces
- 3 slices Galangal
- 2 whole Kaffir lime leaves
- 2 tablespoons Fish sauce
- 1 tablespoon Lime juice
- 2 whole Red chili peppers, chopped
- 200 grams Shrimp, deveined
- 1 cup Cherry tomatoes, halved
- 1 cup Coconut milk
- 1 handful Cilantro, chopped
1. Bring the chicken broth to a boil in a pot.
2. Add the lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
3. Add the mushrooms, fish sauce, lime juice, and chili peppers. Cook for another 5 minutes.
4. Add the shrimp and cherry tomatoes. Cook until the shrimp are pink and cooked through, about 3-4 minutes.
5. Stir in the coconut milk and bring to a gentle simmer. Remove from heat.
6. Garnish with chopped cilantro and serve hot.
