Ingredients 

Main Ingredients

  • 2 cups Cooked turkey, shredded
  • 1 cup Cucumber, sliced
  • 1 cup Carrots, julienned
  • ¼ cup Red onion, thinly sliced
  • ¼ cup Fresh cilantro, chopped
  • ¼ cup Fresh mint, chopped
  • ¼ cup Peanuts, chopped

Dressing

  • 3 tablespoon Lime juice
  • 2 tablespoon Fish sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Honey
  • 1 teaspoon Sesame oil
  • 1 clove Garlic, minced
  • 1 teaspoon Chili flakes

Instructions 

  1. In a large mixing bowl, combine the turkey, cucumber, carrots, red onion, cilantro, mint, and peanuts.
  2. In a small bowl, whisk together the lime juice, fish sauce, soy sauce, honey, sesame oil, garlic, and chili flakes to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately or chill in the refrigerator for up to 2 hours before serving.
