Ingredients 

Main Ingredients

  • 1 tablespoon Vegetable Oil
  • 1 cup Chopped Onions
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 tablespoon Thai Red Curry Paste
  • 1 can Coconut Milk
  • 2 cups Mixed Vegetables (carrots, bell peppers, broccoli)
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sugar
  • 1 tablespoon Lime Juice
  • 1 handful Fresh Basil Leaves

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onions and cook until they are soft and translucent.
  3. Add the minced garlic and ginger, and cook for another minute.
  4. Stir in the Thai red curry paste and cook for 2 minutes.
  5. Pour in the coconut milk and bring to a simmer.
  6. Add the mixed vegetables and cook until they are tender.
  7. Stir in the soy sauce, sugar, and lime juice.
  8. Remove from heat and stir in the fresh basil leaves.
  9. Serve hot with steamed rice.
