Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 cup Yellow Curry Paste
  • 1 can Coconut Milk 400 ml
  • 2 cups Chicken Breast cubed
  • 1 cup Potatoes diced
  • 1 cup Carrots sliced
  • 1 cup Onion chopped
  • 2 tablespoon Fish Sauce
  • 1 tablespoon Sugar
  • 1 cup Water
  • 1 tablespoon Lime Juice
  • 1 handful Cilantro chopped

Instructions 

  1. Heat oil in a large pot over medium heat.
  2. Add curry paste and cook for 2 minutes.
  3. Pour in coconut milk and bring to a simmer.
  4. Add chicken, potatoes, carrots, and onion. Cook for 20 minutes.
  5. Stir in fish sauce, sugar, and water. Simmer for another 10 minutes.
  6. Remove from heat, add lime juice and cilantro. Serve hot.
