Instructions
Heat oil in a large pot over medium heat.
Add curry paste and cook for 2 minutes.
Pour in coconut milk and bring to a simmer.
Add chicken, potatoes, carrots, and onion. Cook for 20 minutes.
Stir in fish sauce, sugar, and water. Simmer for another 10 minutes.
Remove from heat, add lime juice and cilantro. Serve hot.
