Main Ingredients
- 2 cups chicken broth
- 1 can coconut milk
- 1 piece lemongrass stalk cut into 2-inch pieces and smashed
- 3 slices galangal or ginger
- 3 pieces kaffir lime leaves torn into pieces
- 200 grams chicken breast thinly sliced
- 200 grams mushrooms sliced
- 1 piece red chili sliced
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1 teaspoon sugar
- 1 handful cilantro chopped
1. In a pot, bring chicken broth to a boil.
2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
3. Add chicken and mushrooms. Cook until chicken is done.
4. Stir in coconut milk, red chili, fish sauce, lime juice, and sugar. Simmer for another 5 minutes.
5. Remove from heat and garnish with cilantro before serving.
