Ingredients 

Main Ingredients

  • 2 cups chicken broth
  • 1 can coconut milk
  • 1 piece lemongrass stalk cut into 2-inch pieces and smashed
  • 3 slices galangal or ginger
  • 3 pieces kaffir lime leaves torn into pieces
  • 200 grams chicken breast thinly sliced
  • 200 grams mushrooms sliced
  • 1 piece red chili sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1 handful cilantro chopped

Instructions 

  1. 1. In a pot, bring chicken broth to a boil.
  2. 2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
  3. 3. Add chicken and mushrooms. Cook until chicken is done.
  4. 4. Stir in coconut milk, red chili, fish sauce, lime juice, and sugar. Simmer for another 5 minutes.
  5. 5. Remove from heat and garnish with cilantro before serving.
