Main Ingredients
- 500 g Chicken breast, sliced
- 4 cups Chicken broth
- 2 stalks Lemongrass, cut into 2-inch pieces
- 5 leaves Kaffir lime leaves, torn
- 3 slices Galangal
- 2 Red chili peppers, sliced
- 200 g Mushrooms, sliced
- 2 tablespoon Fish sauce
- 1 tablespoon Lime juice
- 1 teaspoon Sugar
- 1 cup Coconut milk
- 1 handful Cilantro, chopped
1. Bring the chicken broth to a boil in a pot.
2. Add lemongrass, kaffir lime leaves, and galangal. Simmer for 5 minutes.
3. Add chicken slices and cook until done, about 10 minutes.
4. Add mushrooms, chili peppers, fish sauce, lime juice, sugar, and coconut milk. Simmer for another 10 minutes.
5. Garnish with chopped cilantro and serve hot.
