Tom Yum Fried Rice

Main Ingredients
- 2 cups Cooked Jasmine Rice preferably day-old
- 1 tablespoon Vegetable Oil
- 2 cloves Garlic minced
- 1 cup Shrimp peeled and deveined
- 1 cup Mixed Vegetables carrots, peas, and corn
- 2 tablespoon Tom Yum Paste
- 1 tablespoon Fish Sauce
- 1 tablespoon Soy Sauce
- 1 teaspoon Sugar
- 2 tablespoon Lime Juice freshly squeezed
- 2 tablespoon Cilantro chopped
Heat oil in a wok over medium-high heat.
Add minced garlic and stir-fry until fragrant.
Add shrimp and cook until pink and opaque.
Add mixed vegetables and stir-fry for 2-3 minutes.
Stir in the cooked rice, breaking up any clumps.
Add Tom Yum paste, fish sauce, soy sauce, and sugar. Mix well.
Cook for another 2-3 minutes, ensuring everything is well combined.
Remove from heat and stir in lime juice and chopped cilantro.
Serve hot and enjoy!
