Tom Yum Noodle Soup
A spicy and sour Thai noodle soup that's perfect for any meal.

Soup Base
- 4 cups Chicken broth
- 2 stalks Lemongrass cut into 2-inch pieces and smashed
- 3 slices Galangal sliced thin
- 3 leaves Kaffir lime leaves torn
- 2 tablespoons Fish sauce
- 2 tablespoons Lime juice
- 1 cup Mushrooms sliced
- 200 grams Rice noodles cooked according to package instructions
- 200 grams Shrimp peeled and deveined
- 1 cup Cherry tomatoes halved
- 2 tablespoons Cilantro chopped
1. In a pot, bring the chicken broth to a boil.
2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
3. Add fish sauce, lime juice, mushrooms, and shrimp. Cook until shrimp is done.
4. Add cherry tomatoes and cooked rice noodles. Stir well.
5. Garnish with chopped cilantro and serve hot.
