- 3 Eggs beaten
- 2 Tomatoes chopped
- 1 tablespoon Oil
- 1 teaspoon Salt to taste
- 1 teaspoon Sugar optional
1. Heat oil in a wok over medium heat.
2. Add the beaten eggs and scramble until just set. Remove and set aside.
3. In the same wok, add a bit more oil if needed and stir fry the tomatoes until soft.
4. Return the scrambled eggs to the wok, add salt and sugar, and stir fry for another minute.
5. Serve hot.
